I don't know where I got this recipe, but it's always a crowd pleaser. I need to remember to make a double batch when cooking for my wife's family.
2 lbs potatoes, cleaned peeled and cubed
1 T chopped garlic
1 small leek mostly white, coarsely chopped
1 T chopped fresh rosemary
2 T white wine or chicken broth
4 T greek yogurt (add more to taste if necessary)
2 T non-fat milk (add more to taste if necessary)
Salt and pepper
Boil potatoes for 15-20 minutes
Place in a 300 degree oven to lightly dry them out
Heat olive oil in a saucepan and lightly brown the leeks and garlic
Add the rosemary and cook for 2 more minutes
Add wine/broth.
Using electric mixer, mix in potatoes. Slowly add yogurt and milk.
Season with salt and pepper
